TAKAMAKA RUM BALLS
Rum is a wonderful flavoursome ingredient that adds a beautiful flavour to many dishes. These sweet rum balls are a wonderful treat to be enjoyed on their own or paired with a warm rum drink after dinner. The caramel undertones found in the light rum add a sweet caramel and butterscotch note to these dainty biscuits elevating their flavour to a wonderful nutty and rich treat.
There is no baking required when making these biscuits making them fool proof and easy for everyone to make them.
1¾ cups Icing Sugar, plus extra for rolling
1 cup Vanilla Wafer fine crumbs (from about 1½ cups cookies processed to crumbs in food processor)
½ cup finely chopped
6 tablespoons soft butter
2-3 tablespoons light rum
- Combine icing sugar, wafer crumbs, walnuts, butter and 2 tablespoons of rum in a bowl.
- Mix until a stiff dough forms, adding another tablespoon of rum if needed to make the dough come together.
- Take a tablespoon of dough and roll them in your hands into ball shapes, and then roll the balls in icing sugar to coat.
