Let’s eat, drink and be merry! These sweet rum balls are a wonderful treat to be enjoyed on their own or paired with a warm rum drink after dinner. The caramel undertones found in our Takamaka Extra Dark Rum add a sweet caramel and butterscotch note to these dainty biscuits elevating their flavour to a wonderful nutty and rich Christmas treat.

There is no baking required when making these biscuits making them fool proof and easy for everyone to make them.

1¾ cups Icing Sugar, plus extra for rolling

1 cup Vanilla Wafer fine crumbs (from about 1½ cups cookies processed to crumbs in food processor)

½ cup finely chopped walnuts, plus extra for rolling

1/4 cup cocoa powder, plus extra for rolling

6 tablespoons soft butter

60 ml Takamaka Extra Dark Rum

  1. Combine the icing sugar, wafer crumbs, walnuts, cocoa powder, butter and rum in a bowl.
  2. Mix until a stiff dough forms, adding a little extra rum if needed to make the dough come together.
  3. Take a tablespoon of dough and roll them in your hands into ball shapes, and then roll the balls in icing sugar, chopped walnuts or cocoa powder to coat.
